Food is, to most of us, one of the most important aspects of our existence and it takes a fool to underestimate the healing power of a good steak, a chocolate or an amazing curry. I urge all dieters and skinny stick insects/ anorectics to not read further than this, for I am now, today, introducing all of us to the most wonderful thing ever…. the healing winter elixir……Michelle Ramsoondar’s Sugar Bean Curry recipe. Print this out and go make it at home. Please be aware that this thing is hot ladies and gentleman, trust me, it’s really hot, so unless you want to store your toilet paper in the freezer for the next few days ease up on the curry powder.

Sugar Bean Curry
Ingredients
2 cups beans uncooked (Boil for +-2 hours)
1 onion
1 tomato
Oil
Curry leaves
Garlic
Turmeric – 1 tsp
Curry Powder – 2 tbs (1 tbs for our light constitutions)
Cinnamon sticks (2-3)
Bay leaves (2-3)
4 potatoes
Coriander
Fry onions till golden brown, add cinnamon, bay leaves, turmeric, garlic. Simmer for few minutes, then add tomatoes, curry leaves, then add curry powder. Add beans, simmer then add potatoes. Add water; simmer for 30 – 45 minutes till potatoes are soft. Garnish with coriander.

This recipe is not a true reflection of the Durbanite curry.I should know as I am a professional curry maker. You can ask anybody in the Durban Branch. I would like to challenge Michelle to a curry cook off, should she ever be in Durban. I am sure that I will retain my Rani Curry Crown at Manpower.
